A full chocolate luscious cake, vegan all the way! The secret ingredient (both in cake and in the cream filling) is avocado!
For the cake:
- 3 cups all purpose flour
- 6 tbsp cocoa powder
- 2 tsp baking powder
- 2 tsp baking soda
- 1/2 tsp salt
- 2 cups coconut water
- 2 cups sugar
- 4 tbsp light oil
- 2 tbsp vinegar
- 1 tsp vanilla
- a little rum for extra flavor (optional)
- a big, ripe avocado well mashed in your blender
For the avocado - choco mousse:
- 2 ripe avocados
- 1 tbsp cocoa powder
- 2 tbsp honey
- 1 tsp vanilla
Mix well first 5 dry ingredients. Heat slightly the coconut water and add the sugar so it dissolves. Add oil, vinegar, vanilla and rum (if desired).
Add liquids to dry ingredient mix and stir, together with the avocado pulp. Divide the cake mixture in two baking pans lined with baking parchment paper and bake to 180 C oven for about 25 min.
When cakes cool, cut horizontally each one so that you have 4 discs od cake.
Spread the avocado - choco mousse (blend all the mousse ingredients together) evenly over each cake disc and decorate the top of the cake with the remaining mousse.
